  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 can (15 oz) of kidney beans, drained and rinsed
  • 1 can (15 oz) of diced tomatoes
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeño pepper, diced (optional for spice)
  • 1 cup of vegetable broth
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions:

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion, garlic, bell pepper, and jalapeño pepper. Cook until the vegetables are softened, about 5 minutes.
  2. Add the chili powder and cumin to the pot and stir to combine with the vegetables. Cook for another minute to toast the spices.
  3. Add the diced tomatoes (with their juices), black beans, kidney beans, and vegetable broth to the pot. Stir to combine all the ingredients.
  4. Bring the chili to a simmer and let it cook for about 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened.
